Hi, I’m Chef Melissa.
Melissa Schaefer

I create thoughtful, farm-driven private dining experiences inspired by the Hudson Valley and shaped by my New York City training.

I tell a story with local ingredients—so your table feels connected, seasonal, and unforgettable.

I began my professional career in New York City, training in demanding kitchens including Eleven Madison Park, The NoMad Hotel, Chez Sardine, and The Russian Tea Room. Those years were intense, and they built the foundation of my technique, discipline, and respect for hospitality.

In 2016 I stepped away from city life and traveled to Alaska, where I cooked at Tutka Bay Lodge and re-learned how to appreciate every facet of telling a story with food. Today my inspiration comes from Hudson Valley farms—when ingredients are grown with care, I highlight their peak character in ways that feel exciting, personal, and deeply connected to the people gathered around the table.

Striving to impress myself and staying curious, I think about the experience of your first bite before I decide what to make.

I cook with intention and heart

Cooking is an expression of love for me, and it’s the foundation I use to build an unforgettable experience—every course is designed to feel cohesive, generous, and memorable.

I pair fine-dining rigor with real family roots

I’ve learned a lot throughout my career, but everything important about what it means to cook, I learned from my Nonna—and I bring that same care and instinct to every menu I create.

I lead with curiosity—and your first bite

I’m always striving to impress myself and stay curious; I focus on how your first bite should feel before I decide what to make, so the entire meal lands with purpose and pleasure.
